Blueberry Squares

These blueberry oatmeal squares are delicious and nutritious, sweetened only with dates.
IMG_1099_FotorI am following a super healthy diet to try to return all my systems to maximum health. This way of eating is not a whim, I am following it in an effort to conquer some chronic health issues. I will say that my diet makes me feel physically better than ever. I am strong and full of energy. I don’t eat dairy, modern wheat or processed foods.

The most difficult thing for me is saying goodbye to cheese. A bean burrito is naked without it! Second to cheese, the hardest thing is saying goodbye to is Häagen Dazs.

To make up for not being able to have the occasional sweet treat, I’ve invented my own brand of treats. I bake a pan of fruit /oatmeal squares every few weeks, freeze them and have a square any time I feel like a sweet treat. The beauty of my recipe is that I use no processed sugar. All the sweetness comes from dates. I’ve made date squares and cherry squares but blueberry are my favourite. The blueberry flavour is strong and delicious. I hope you enjoy these healthy and tasty treats:

Blueberry Squares by Mix

Topping and crust:

1 1/2 cup of large flake oats

1 1/2 cup almond flour (ground almonds)

1 tbsp ww sprouted spelt flour

1/2 c date sugar

3/4 c coconut oil (or 1/4 c butter + 1/2 c coconut oil—butter keeps them firmer at room temp.)

1 tsp cinnamon

Filling:

1/3 lb pitted dates (150 g approx.)

3 cups of blueberries (I use frozen)

juice from 1/2 lemon

*if using fresh blueberries, add 1/3 cup water to the berries

-on medium heat, boil blueberries and dates and lemon juice until thickened,

breaking up dates until the mixture is smooth and blended

-mix dry ingredients together and pat 1/2 into greased 9″x9″ pan

-spread blueberry filling on top

-top with remaining oatmeal topping

-bake at 350 F for 25 minutes

-slice when cooled and store in fridge or freezer
